this might be one of the easiest dinners to put together. it uses leftover refrigerator items and pantry items. super easy!!!
I originally saw this used by a friend of mine right after thanksgiving. she used some of her leftover turkey to do this and so did i. you could also use chicken too, or make it vegetarian and omit the meat all together. whatever floats your boat.
here is your recipe:
tortilla chips
1 baggie of leftover turkey meat
1 jar of picante salsa (I used medium)
shredded cheese (any kind)
heat the oven to 350 degrees and grab a 13x9 pan. line the bottom of the pan with tortilla chips, then spread half of your turkey meat on top, then pour half of your salsa on top, then sprinkle some cheese on top. repeat. cover the top very loosely with foil. put in the oven for about 30 minutes or so.
note: this fed our family of four plus an adult portion for lunch the next day.
and that is it! easy, peasy. it’s like a mexican version of lasagna. the torilla chips on the inside become soft and the ones on the edges become really crispy. it is a nice balance of the two. you can add sour cream and guacamole if you like. or if you are like my hubby, you can add some more spice and add hot sauce/hot salsa on top too. my kids even liked this meal. so easy!!
