one way to do this is to follow the recipe below, or an easier way is to order two orders of fried rice takeout and mix it with your last bag of leftover turkey.
my way, I think, is WAY more yummy!!
this meal requires a little foresight. it is always best to use cold/leftover white rice when making fried rice. so for lunch this day, I made 4 cups of cooked rice and put in the fridge for later. it’s something about the cold when it hits the hot skillet. the rice doesn’t become mushy, but it keep is form. I don’t know, but all I do know is that it works. so I listen.
I kind of made this up along as I went, so I am sorry if the measurements aren’t exact.
2 eggs
salt/pepper
frozen bag of peas and carrots
1 bag of leftover turkey
4 cups cold white rice
soy sauce
sesame seed oil {I told you, you would get good use of this}
start by heating a skillet or a wok on medium heat. throw a chunk of butter in to coat the bottom. while the butter is melting, scramble two eggs in a bowl. once, the butter is melted, pour the eggs in the skillet. add salt and pepper for taste. scramble the eggs just until they are fully cooked (not runny, but not solid on all sides). remove from skillet. put about 1/2 cup of frozen peas and carrots in the skillet. cook for a little while, then add the turkey to the skillet. cook some more until warm. then add the rice to skillet. stir around until heated through. add the eggs back to the skillet. keep stirring. at this point, is when you will add the soy sauce and sesame seed oil. I just drizzled the soy sauce on until the rice was all brown. it was about 1/4 cup. I added maybe a 1/2 tsp of sesame seed oil. you will want to add slowly and taste as you go to find the right taste you want for your fried rice. keep stirring to mix all the different flavors together and until it is hot all the way through.
note: this serves my family of four and 1-2 lunches portions. you could substitute different veggies if you like. make it unique to your family’s likes and tastes. this will not disappoint you. I promise.
this is my last turkey post. I think I did good with my leftover meals and I definitely stretched my dollar.
